Foodie Friday: Carrot Cake Gone Clean

I think I’ve just died and gone to carrot cake heaven! And the best part? I get to devour this entire plate guilt-free, because it’s clean and on my nutrition plan! HELLLLLLS YEAH!

  
A fellow fitness coach friend of mine shared this yummy recipe in our virtual fit group, and I can't get enough of it!  It's clean, healthy, and oh so simple, which makes it perfect for a delicious pre- or post-workout snack.  It's packed with veggies, protein, and healthy carbs, so all of your macros are covered.  And BONUS... You can make it into muffins for a quick grab-n-go option! 

Just when I think this plan can’t get any better, I come across treats like this one that change the game!  And that’s what I LOVE about most about my business and these fit groups--Not only can I count on my ladies for support and encouragement, but it offers us a place to swap healthy recipes and share tips and tricks to stay on track.  Basically, what I'm trying to say is, my fit ladies ROCK MY WORLD!

I've received a TON of requests for the recipe, and I always believe that GOODNESS should be shared, so here ya go!  

Ingredients:
  • 1 cup shredded carrots
  • 1/2 cup dry rolled oats
  • 2 eggs, slightly beaten
  • 3/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tsp pure vanilla extract
  • 1/2 tsp Stevia (optional, for added sweetness)
Directions:
  • Preheat oven to 350F
  • Grease a small loaf pan or muffin tins
  • Combine all ingredients in a food processor or blender, and blend until well mixed
  • Pour into loaf pan or divide mixture among muffin tins
  • Bake for 20 to 25 minutes
I top mine with a 1 tsp of all-natural peanut butter or almond butter to fit into my nutrition plan.  But a drizzle of honey, or a swirl of whip cream would also be amazing!

Now, don't get it twisted.  This is by no means your traditional carrot cake.  Just like most healthy recipes, it's not packed with butter, sugar, oil, cream, or any of that other "stuff" that makes you feel "stuffed".  So don't dig into it expecting Betty Crocker, because Betty don't bake like this! 

BUT, if you are working towards a cleaner diet and lifestyle, and looking for a little something to satisfy that craving, give this a shot!  And definitely let me know what you think! 

If you're following the portion-control colored container system, one serving equals 1 Green, 1 Red, 1 Yellow, and 1 tsp.

Becoming a Runner: Week 4 Update

I now have 4 weeks of running under my belt, and I have to say that it feels amazing!   I made an improvement from my previous two weeks, and ran 4 days last week.   My goal was to run 5 days, and while I fell short of meeting that, I’m still so happy with my progress.   We were blessed with some AMAZING weather in Louisville last week, which definitely improved my mood and my motivation.   It was sunny and so much warmer, and running in 50 degrees is, without a doubt, easier than running in those freezing temperatures I ‘d been facing! Becoming a Runner: Week 3 Update

Week 3 of my 30-Day Running Challenge was similar to Week 2 in that it was not very exciting.   It’s been very cold here in Louisville—like, walk outside and you immediately freeze where you stand cold.   And because getting out of bed on time in the morning is a daily struggle for me, and I work 10+ hour shifts a day, my runs are limited to nighttime, when it’s blistering cold and all I want to do is crawl under a cozy blanket and cuddle with Tilton while watching our shows.   Needless to say, finding the motivation to run when I get home from work has been tough.   I’m doing my best to stick with it though.   During Week 3 (January 4 – January 10), I only ran 3 days again.   Bummer.
